Would you like a potato? An Irish Potato? It’s candy….
Bake a potato. Let it cool. Scoop out the flesh into a bowl and mash it up. Add a lot of confectioner’s sugar and shredded coconut. Add a dash of vanilla extract. Keep adding the sugar and coconut until it’s the consistency of stiff dough. Shape into small potatoes. Put a few pieces at a time in a bag with ground cinnamon and shake it around. Enjoy!

LOL! What a brilliant take on spuds!
I was in West Cork last week - had a lovely time. Stayed in small 3 star hotel with very comfortable beds and own ‘restaurant’. They served ‘country size portions of roast’ and A LOT of starchy potatoes, no less than three different varieties for the main course. The linen table cloths were starched too, as were the napkins!

Almost every time, when somebody finds out from my husband that “his wife is from Russia”, their respond is: “Oh, they eat a lot of potatoes there!” Sometimes it is followed with excited:” And they make vodka with it too!!” And I think he is getting annoyed with it a bit… Soooo, you just wait until i make him some potato candy! :D))))))
