Here we go again. Today was the first week of our CSA and the bag did not disappoint. I’m determined to find uses for the greens this year. At the very least I’m going to try chopping them up and freezing them to toss into soups, stews, pastas later. The farm changed the egg share to half dozens this year and for us this is a good thing. There were some weeks last year when we were giving eggs away left and right. There’s nohing like fresh local produce, yum.

Oooh! I’ve been thinking about doing this for a few years but am always scared of being “stuck” with a bunch of veggies I won’t use. Everything looks so fresh!

We’ve been getting our veggies for a few weeks now and so far, we’re doing a great job getting them all eaten. I made a Spinach-garlic chives-Alfredo lasagna last night that wasn’t received very well by the children. But the grown ups liked it!

Looks delicious! The Swiss chard would be yummy in a quiche or mixed with ricotta and parmesan and stuffed into shells for manicotti.
